Take a look at the sentence again:

Cristie would have chose a less expensive dinner, but when she saw squid eyeball stew on the menu, she knew that she had found the perfect thing to eat.

The first verb, would have chose, is incorrect. It requires the past participle chosen because of the auxiliary verbs would and have. Choose is an irregular verb; the chart below shows its forms.
